Ingredients:

1 Tbsp of Cod Liver Oil

1 tsp of lemon juice

1 package (8 oz.) of mascarpone cheese or cream cheese, softened

¾ cup of plain full-fat Greek yogurt

⅓ cup of confectioners’ sugar

2-3 drops of yellow food coloring, optional

⅓ cup of raspberry jam, warmed

1 package (4 oz.) of 6 mini graham cracker tart shells

18 raspberries

Mint leaves

Tart shell baking pan
Procedure:

Mix together the cod liver oil, lemon juice, mascarpone, full-fat greek yogurt, and sugar and stir until it is combined well

Place a tablespoon of raspberry jam in the bottom of each tart shell of the baking pan

Pour lemon filling over the raspberry jam and distribute evenly

Let the raspberry and lemon filling mixture sit in the fridge for 30 minutes

Top with raspberries and mint leaves and drizzle raspberry jam
